Introducing 25hours Hotel The Olympia, which opened in the vibrant Sydney suburb of Paddington. Housed within the iconic West Olympia Theatre, the hotel features 109 rooms, multiple dining spaces including The Palomar restaurant, Jacob the Angel café, and Monica, the roof-top bar. A new era awaits at 25hours Hotel The Olympia which will shape and transform the local hospitality scene, welcoming a vibrant and diverse team, bringing its vision to life.   

COME AS YOU ARE & ROCK OUR KITCHEN … 

We're looking for a Sous Chef who's as passionate about people as they are about food. From sunset sessions at Monica Rooftop to unforgettable events, you'll help lead the kitchen, champion quality, and deliver experiences that leave a lasting impression. Supporting our Head Chef, you'll inspire and develop the team, bring fresh ideas to the table, and help create the vibrant dining experiences that makes us anything but ordinary.

How does your working day look like …

• Leading daily kitchen operations across Monica kitchen and events at the hotel / in venue

• Work closely with the Event Operations Manager and other departments to ensure seamless service and the overall guest experience

• Maintain a consistent level of quality in food preparation, presentation, and taste

• Manage, train, and mentor kitchen staff, fostering a positive and productive work environment

• Oversee rostering, labour management, and team development

• Monitor stock levels, order supplies, and manage food costs to keep the kitchen within budget

• Collaborate with the Head Chef on menu changes, costings and recipe development

• Stay up to date with culinary trends, introducing new techniques, flavours, and concepts to keep the menu innovative and exciting

• Ensuring full compliance with food safety, hygiene, and workplace health & safety standards

We are looking for you – with personality and that certain something … 

• You have at least 1 year of experience in a Sous Chef role within a hotel operation or independent venue;

• You are passionate about food and have a creative approach to designing menus and presenting dishes;

• You have proven experience motivating a diverse kitchen team in a high-pressure environment;

• You have a strong focus on quality, cleanliness, and presentation;

• You possess thorough knowledge of food safety regulations and kitchen hygiene practices;

• You have strong communication skills and can collaborate effectively with front-of-house staff and other departments;

• You are able to remain calm and effective in a fast-paced environment.
