Sous Chef

About the role

As Sous Chef, you'll work closely with the Head Chef and take responsibility for leading service and running the pass when required, maintaining strong standards across prep, presentation and service, and supporting stock control, ordering and food cost management. You'll assist with rostering, organisation and day-to-day kitchen operations, train and develop junior chefs, maintain food safety and compliance standards, help create a calm and organised kitchen environment, and step into the Head Chef role when required.

Key responsibilities

• Lead service and run the pass when required

• Maintain strong standards across prep, presentation and service

• Support stock control, ordering and food cost management

• Assist with rostering, organisation and day-to-day kitchen operations

• Train, support and develop junior chefs

• Maintain food safety, cleanliness and kitchen compliance standards

• Help create a calm, organised and accountable kitchen environment

• Step into the Head Chef role when required

About you

• Previous Sous Chef experience, or a strong senior CDP ready to step up

• Experience in busy, quality-driven hospitality venues

• Lead by example and communicate clearly

• Remain calm and organised during busy services

• Strong understanding of kitchen organisation, stock control and food costs

• Take ownership and follow through on responsibilities

• Reliable, consistent and committed to maintaining high standards

• Enjoy developing younger chefs and contributing to a strong team culture

Last One Inn is a busy coastal venue in Anglesea with a strong team, established systems and a clear focus on quality, consistency and a positive working culture. The venue currently trades Thursday to Saturday for dinner and Sunday for lunch.
